Sweet , tart and delicious!
Several years back, on a family vacation, I had some of the best key lime pie ever. Key lime pie is one of my favorite overall, so I have tried many. After visiting the Tommy Bahama restaurant and trying their key lime pie, I had to find a copy cat recipe.
You can find the original recipe on their website, and read below my experience making this delicious pie at home with a few tweaks to call it my own.
Ingredients
10" graham cracker crust
1 egg white
2 1/2 cups sweetened condensed milk
3/4 cup egg yolks
1 cup key lime juice
1 lime
Separate about dozen eggs white from the yolk.
Brush egg white onto uncooked pie shell using a pastry brush. Make sure the crust is coated but drain off any excess.
Pre heat oven to 350F
Place pie shell in the pre-heated oven and bake for 5 minutes. Let the crust cool at room temperature.
While the shell is cooling, measure 3/4 cup of egg yolks and add to the condensed milk using a wire whisk until incorporated.
Pour the key lime juice into the mixture of yolks and the condensed milk, slowly mixing.
Add the key lime pie mixture to the cooled pie shell
8. Adjust oven temperature to 250F and bake 25 minutes.
9. Turn heat up to 350 and bake an additional 8-10 minutes to ensure yolks are fully cooked for safety.
10. Place on a cooling rack and refrigerate before serving.
